Usually Great Planes is pretty good about telling you about what types of glue to use in the instructions. Make sure that you read your instructions all the way through before you start, that way you can get an idea of what you'll be getting into. Generally, you will be using Epoxy for all of your joints that need to be really strong (firewall, landing gear mounts, etc.) and CA (super glue) for everything else. Medium CA will be good for most of the build, but you will probably need a little thin as well for sheeting and hinges. As far as Epoxy goes, I wouldn't use anything quicker than a 15 min epoxy. The 5 minute stuff just doesn't have enough time to really soak into the wood before it sets up. I lost an Ultra Stick because of this a couple years ago. They don't like it when the tail comes off in midair!
Also, if you are fortunate enough to be able to use CA, your build will go really quickly. Unfortunately for myself and a couple other club members, we are allergic to it, and can only use very small amounts of it at a time. I build mostly with Titebond carpenter's glue, which is basically an alphiatic resin, and it works fairly well, it just takes longer to set up.
You might try getting hold of Dave Heil, Larry Vance, or Carl Becker. They usually will have a kit build going, and are very good builders.
